- 125 ml (½ cup) extra-virgin olive oil
- 600 g (1.3 lb.) fresh salmon
- 200 g (7 oz.) smoked salmon
- 1-2 shallots (to taste)
- 1 lemon (juice and zest)
- 5 sprigs fresh dill
- 5 branches de persil frais
- 1 large orange, supremed
- Salt and freshly ground black pepper
- Mince all the ingredients and place them in a bowl.
- Mix all the ingredients together and season to taste.
- Use a cookie cutter to shape the tartares.
