Two-salmon tartare

Ingredients

  • 125 ml (½ cup) extra-virgin olive oil
  • 600 g (1.3 lb.) fresh salmon
  • 200 g (7 oz.) smoked salmon
  • 1-2 shallots (to taste)
  • 1 lemon (juice and zest)
  • 5 sprigs fresh dill
  • 5 branches de persil frais
  • 1 large orange, supremed
  • Salt and freshly ground black pepper

Preparation

  • Mince all the ingredients and place them in a bowl.
  • Mix all the ingredients together and season to taste.
  • Use a cookie cutter to shape the tartares.
