Organic salmon burgers with basil mayonnaise and prosciutto chips

Ingredients

Marinade

  • 1/3 cup olive oil
  • 2 tablespoons white balsamic vinegar
  • 1 tablespoon honey
  • The juice of 1 lemon
  • 2 tablespoons finely chopped fresh basil
  • 2 tablespoons finely chopped fresh mint
  • 2 garlic cloves, finely chopped
  • Salt and pepper from the mill

Basil mayonnaise

  • 1/2 cup mayonnaise
  • 1/4 cup very finely chopped fresh basil
  • 1 tablespoon chopped chives
  • 1 small clove garlic, minced very finely
  • Salt and pepper from the mill

Burgers ingredients

  • 4 organic salmon fillets (200 g each), skin removed
  • 4 brioche hamburger buns
  • 8 slices of prosciutto cooked slightly crispy
  • Alfalfa
  • 4 Slices of mozzarella cheese
  • 4 small pickles
  • *Equipment required: Cookina BBQ Cooking Sheet

Preparation

  • In a bowl, add the ingredients for the marinade and season with salt and pepper. Mix and reserve.
  • In another bowl, add the ingredients for the mayonnaise and season with salt and pepper. Mix and reserve in the fridge.
  • Préchauffer le BBQ à puissance maximale et réduire à puissance moyenne. Ajouter la feuille de cuisson et faire chauffer 2 minutes.
  • Place the salmon fillets on the baking sheet and brush with the marinade. Cook for 10 to 12 minutes, basting regularly. Remove from BBQ and reserve. Toast the bread to taste.
  • Build your burgers! Spread some mayonnaise inside the breads and place a salmon fillet on the bottom bread. Add a slice of cheese, followed by 2 prosciutto chips and a nice handful of alfalfa. Add the bread on top and then prick a small pickel with a long toothpick! And ...Voilà!
