Grilled mackerel with fennel salad

Ingredients

  • 300 g (10 oz.) fresh mackerel, skin-on (2 fillets, approx. 150 g or 5 oz. each)
  • 30 ml (2 tbsp.) vegetable oil

Fennel salad

  • 125 ml (½ cup) green olives, pitted and coarsely chopped
  • 125 ml (½ cup) red peppers, finely diced
  • 125 ml (½ cup) tomatoes, finely diced
  • 125 ml (½ cup) fennel, finely diced
  • 1 shallot, minced
  • 30 ml (2 tbsp.) minced chives
  • 30 ml (2 tbsp.) vegetable oil
  • 15 ml (1 tbsp.) red wine vinegar
  • Salt and pepper

Preparation

Salade

  • Combine all the ingredients in a bowl. Set aside.

Mackerel

  • Heat the barbecue (or a grill) to high.
  • Brush the mackerel with oil and season with salt and pepper. Place the fillets skin-side down on the grill and cook for about 5 minutes without turning them over. When the flesh is white three-quarters of the way through, remove them from the grill.
  • Serve the mackerel with the salad.
