
Cod poached in garlic-flavoured milk, with cauliflower and caviar
Ingredients
- 300 g (10 oz.) fresh cod (two 150 g or 5 oz. steaks)
- 500 ml (2 cups) milk
- 1 clove garlic, crushed
Cauliflower puree
- 750 ml (3 cups) cauliflower, cut into pieces
- 250 ml (1 cup) milk
Assembly
- 250 ml (1 cup) cauliflower shavings
- Caviar, any type
Preparation
Puree
- Cook the cauliflower pieces and milk in a small saucepan over medium heat. Simmer, covered, for 20 minutes, or until the cauliflower is cooked.
- Blend the mixture until it becomes a smooth puree.
- Season with salt.
Cod
- In a small high-sided saucepan, heat milk with crushed garlic clove over low heat. When the milk is hot, add the 2 pieces of cod and cook uncovered for 7 to 10 minutes (the milk should completely cover the cod). As soon as the cod pieces start to flake to the touch, it is ready.
- Gently remove the cod steaks from the milk and serve immediately.
- Serve the cod with the puree, raw lightly oiled and seasoned cauliflower shavings, and caviar.
